A delicious small batch version of a classic favorite.

Ingredients

  • 1/4 cup (52g) coconut oil
  • 1 1/2 tsp. (4.5g) coconut milk powder
  • 2/3 cup (80g) powdered sugar
  • 1 Tbsp. + 2 tsp. (20g) brown sugar
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1 large egg, room temperature
  • 1/2 tsp. espresso powder
  • 2 1/2 Tbsp. (23g) dutch process cocoa powder
  • 1/4 cup + 2 Tbsp. (30g) all-purpose flour
  • 1/4 cup (28.3g) chocolate chips

Instructions

  1. Brown coconut milk powder in coconut oil.
  2. In the meantime, add sugars, vanilla, espresso powder, and salt to a bowl. Add in coconut oil, and stir until fully incorporated.
  3. Vigorously whisk in egg for 1 minute until mixture has emulsified, lightened in color, and powdered sugar has greatly dissolved.
  4. Whisk in cocoa powder, then fold in flour.
  5. Fold in chocolate chips.
  6. Pour batter into a greased 8” x 4” loaf pan.
  7. Bake at 350°F for 13 minutes.

Notes

If top isn’t fully shiny and crackly, substitute the brown sugar for 20g of powdered sugar.

An elevated version of a store bought classic.

Ingredients

Dry ingredients

  • 3 1/2 Tbsp. (28g) all-purpose flour
  • 2 Tbsp. (19g) cocoa powder
  • 1/8 tsp salt

Wet ingredients

  • 1 Tbsp. + 2 tsp. (22.8g) coconut oil
  • 1/4 cup + 1 1/2 Tbsp. (70g) brown sugar
  • 1 Tbsp. (12.5g) egg
  • 1/2 Tbsp. (10.5g) honey
  • 1 tsp. milk
  • 1/2 tsp. vanilla extract

Ganache

  • 1/4 cup + 2 Tbsp. chocolate pieces
  • 2 1/2 Tbsp. soy milk

Topping

  • Candy coated chocolate chips

Instructions

Brownie base

  1. Sift dry ingredients together and set aside.
  2. Whisk melted coconut oil and brown sugar for 20 seconds until somewhat combined. 
  3. Beat in egg yolk, honey, milk, and vanilla for ~1 minute until smooth. Fold in dry ingredients until just combined. 
  4. Pour batter into a greased 8”x 4” loaf pan. Bake for 14? minutes until middle is set. Allow to cool to room temperature.

Ganache + topping

  1. Melt chocolate chips over a double boiler, then slowly add in milk. Stir vigorously until combined.
  2. Pour ganache over cooled brownies and spread evenly. Sprinkle candy coated chocolate pieces on top and allow to set for 20 minutes.
