A creamy, eggy pudding that is perfectly sweet.
Ingredients
- 1/2 cup small tapioca pearls
- 1 cup warm water
- 2 1/4 cups milk
- 1/4 tsp. salt
- 1/2 cup granulated sugar
- 1 tsp. vanilla extract
- 2 large eggs
Instructions
- Place tapioca pearls and warm water in a pot. Set aside to soak for 15-30 minutes.
- Turn the heat to medium-high (6), then add in salt and 1 cup of milk. Bring to a simmer.
- Allow to simmer for ~5 minutes until thick, stirring often.
- Reduce heat to low (2) and stir in sugar and vanilla.
- In a separate bowl, beat egg. Slowly add 1/2 cup of hot mixture to the egg, whisking constantly until smooth. Pour egg mixture into pot and whisk until smooth.
- Slowly add in remaining 1 1/4 cup of milk, stirring continuously.
- Continue to cook, stirring often and covering as needed, until almost all tapioca pearls are translucent, ~10 more minutes.
- Allow to cool for 5-10 minutes, then pour pudding into serving dishes.
