Ingredients
Mix-ins
- 1/2 cup (50g) quick oats
- 1/2 cup (48g) rolled oats
- 1/2 cup (12.5g) puffed rice
- 1/3 cup chopped nuts
- 1/4 cup dried fruit
Syrup
- 1/4 cup + 1 Tbsp. (61g) brown sugar
- 2 1/2 Tbsp. (51g) brown rice syrup
- 1 Tbsp. (18g) coconut oil
- 1/2 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
Instructions
- Combine oats, puffed rice, nuts, and dried fruit in a bowl. Set aside.
- Line 8”x4” loaf pan with parchment paper. Set aside.
- In a large pot, add sugar, brown rice syrup, and coconut oil. Heat over medium-low (3) until brown sugar has dissolved, then cook for 1-2 additional minutes. Remove from heat and stir in vanilla, salt, and spices.
- Immediately add in dry ingredients. Stir until just fully combined (for ~20 seconds max).
- Pour mixture into loaf pan, then press firmly with wet hands. Set aside for at least 30 minutes to cool.
