A hearty, wholesome mini muffin perfect for breakfast or on the go.
Ingredients
- 3/4 cup (43g) wheat bran
- 1/2 Tbsp. (4.3g) flax meal
- 1/2 cup + 1 1/2 Tbsp (145.5g) milk
- 1/4 cup applesauce
- 2 Tbsp. (24.3g) brown sugar
- 1/4 tsp. vanilla
- 1/2 cup (62.5g) www flour
- 1/4 tsp. cinnamon
- 1/8 tsp. ginger
- 1/4 tsp. baking soda
Instructions
- Mix wheat bran, flax meal, milk, applesauce in a bowl. Set aside for at least 10 minutes or put in the fridge until ready to bake.
- Stir in brown sugar, and vanilla. Then stir in remaining ingredients.
- Separate into 12 greased mini muffin tins. Bake at 350°F for 9 minutes, until tops are firm.
- Allow muffins to cool in the pan for 5 minutes, then remove and place on a baking rack.
