Sweet cherry pie

A delicious, summery pie.
Ingredients
- 3 1/2 lb. sweet cherries
- 3/4 cups sugar
- Zest of 1/2 a lemon
- 1 Tbsp. lemon juice
- 1 Tbsp. tart cherry juice (optional)
- 1/2 Tbsp. amaretto
- 1/2 tsp. vanilla extract
- 1/8 tsp. salt
- 3 Tbsp. corn starch
- 2 pie crusts
- 1 egg
- 1 Tbsp. milk
Instructions
- Wash, stem, halve, and pit cherries. Add remaining ingredients besides pie crusts and set aside.
- In the meantime, press pie crust into the bottom of 2 pie plates. Add half the filling to each pie crust, then top with second crust. Crimp edges with a fork, then freeze pies for 10-15 minutes. While freezing, preheat oven to 400°F.
- Once oven is preheated, brush top of pies with egg wash. Add slits for ventilation, then put pies on a baking sheet. Place in bottom third of the oven for 20 minutes, then lower the heat to 350°F for 40-50 minutes.
- Remove from oven and allow to cool for 3 hours or overnight.
