Cinnamon pull apart bread

A sweet cinnamon pull apart bread that is great for brunch.

Ingredients

  • 2 cups flour
  • 1 tsp. active dry yeast
  • 1/2 cup + 3 Tbsp. milk
  • 1 3/4 Tbsp. sugar
  • 2 1/2 Tbsp. oil
  • 1 egg
  • 1/2 tsp. salt

Coating:

  • 1/4 cup brown sugar
  • 1 tsp. cinnamon
  • 1/8 tsp. salt

Instructions

  1. Heat milk in a saucepan until warm. Beat with sugar, oil, and egg until light and fluffy.
  2. Add flour and yeast and combine until dough is slightly sticky. Allow to rest for 10 minutes. Add salt, then knead until dough is soft, ~6 minutes. Cover and set aside until doubled, ~1 1/2 to 2 hours.
  3. Combine coating ingredients and set aside. Place dough onto an oiled surface. Cut into 1” pieces, shape into balls, then roll each piece in coating mixture.
  4. Place pieces evenly, stacking as needed, in a greased 8”x4” loaf pan. Sprinkle any unused coating mixture over the top of pieces. Set aside to rise until puffy but not quite doubled, ~45 minutes to 1 hour.
  5. Bake at 350°F for 25-30 minutes until pieces are fully cooked throughout.
