Cinnamon pull apart bread

A sweet cinnamon pull apart bread that is great for brunch.
Ingredients
- 2 cups flour
- 1 tsp. active dry yeast
- 1/2 cup + 3 Tbsp. milk
- 1 3/4 Tbsp. sugar
- 2 1/2 Tbsp. oil
- 1 egg
- 1/2 tsp. salt
Coating:
- 1/4 cup brown sugar
- 1 tsp. cinnamon
- 1/8 tsp. salt
Instructions
- Heat milk in a saucepan until warm. Beat with sugar, oil, and egg until light and fluffy.
- Add flour and yeast and combine until dough is slightly sticky. Allow to rest for 10 minutes. Add salt, then knead until dough is soft, ~6 minutes. Cover and set aside until doubled, ~1 1/2 to 2 hours.
- Combine coating ingredients and set aside. Place dough onto an oiled surface. Cut into 1” pieces, shape into balls, then roll each piece in coating mixture.
- Place pieces evenly, stacking as needed, in a greased 8”x4” loaf pan. Sprinkle any unused coating mixture over the top of pieces. Set aside to rise until puffy but not quite doubled, ~45 minutes to 1 hour.
- Bake at 350°F for 25-30 minutes until pieces are fully cooked throughout.
