A delicious African comfort food that goes beautifully with shitto.
Ingredients
- 1 large yam
- Oil, for frying
- Water
- Salt
Instructions
- Peel yam and cut into large sticks.
- Cover in water and soak for up to 30 minutes. Drain and pat completely dry.
- Preheat oil for frying over medium (5). Fry yam in batches until fully cooked through, ~12-15 minutes per batch.
- Drain excess oil on a paper towel.
Notes
Yam can also be parboiled instead of soaked. This will reduce the frying time by half.
Yam is cooked when inside is soft and fluffy and the outside is crispy.
