Sourdough fruit cobbler

A biscuit-topped fruit dish that is sweet and satisfying.
Ingredients
Cobbler
- 1/2 c. sourdough starter
- 1/4 c. flour
- 2 Tbsp. coconut oil
- 1 Tbsp. coconut sugar
- Pinch of salt
Fruit
- 2 1/2 lbs. of fruit
- 1/2 Tbsp. cornstarch
- 1/4 tsp. cinnamon
- Pinch of salt
Instructions
- Combine flour, coconut oil, and ghee together until pea-sized pebbles form.
- Add in sugar and sourdough starter and mix until combined.
- Add in enough water to make a shaggy dough that is slightly sticky. Loosely cover and refrigerate overnight or allow to sit at room temperature for 4-6 hours.
- Once cobbler mixture has rested, prepare the fruit. Combine all fruit ingredients (using only 1 Tbsp. of the sugar) together in the bottom of an 8”x8” baking dish.
- Mix in baking powder, baking soda, and salt to the cobbler dough until just combined. Spread cobbler dough evenly across top of fruit.
- Brush top of cobbler dough with ghee, then sprinkle remaining coconut sugar over the top. Bake at 375°F for 35 minutes, until top is completely cooked through and fruit is bubbly. Allow to cool.
Notes
2 1/2 lbs. of fruit equals roughly 6 apples.
Some ideas for fruits to use include apples, pears, peaches, berries, strawberry rhubarb, etc.
