Chicken kebabs are a fun way to change up eating chicken. This is an easy recipe that benefits from a marinade to enhance the flavor. Using chicken thighs produces nice, juicy pieces of chicken put together on skewers.

Ingredients
- 8 chicken thighs
- 8 wooden skewers
Marinade
- 2 Tbsp. lemon juice
- 2 Tbsp. olive oil
- 1/2 tsp. liquid smoke
- 1/2 Tbsp. smoked paprika
- 1 tsp. garlic powder
- 1 tsp. oregano
- 1 tsp. basil
- 1 tsp. thyme
- 3/4 tsp. salt
- 1/2 tsp. pepper
Instructions
- Rinse chicken and pat dry. Cut into 1″ to 1 1/2″ pieces.
- Mix chicken with marinade ingredients. Allow to marinade in the fridge for at least 2 hours upt o 24 hours.
- Once ready to cook, turn the oven on to low broil. While it is preheading, soak 8 skewers for at least 10 minutes.
- Put chicken evenly on skewers. Put skewers onto baking sheet and cook for 18-20 minutes. Halfway through, drain juices and flip kebabs.
