A spicy African preparation of chicken that is unique and delicious.
Ingredients
- 10-12 small hot chilis
- 3 red jalapeños
- 4 habaneros
- 3/4 red onion
- 1/4 red bell pepper
- 8 cloves garlic
- 1/2” ginger
- 4 Tbsp. apple cider vinegar, divided
- 2 Tbsp. lemon juice
- 1 tsp. dried basil
- 1/2 Tbsp. smoked paprika
- 1/2 tsp. salt, to taste
- 2-3 Tbsp. oil
Instructions
- Blacken all vegetables on a cast iron skillet over 5-6 heat, or broil on high until black spots appear. Allow to cool slightly.
- Blend blackened vegetables, 2 Tbsp. vinegar, lemon juice, and spices until smooth. Add just enough water to blend, if needed.
- Add blended ingredients to a saucepan. Add oil and remaining vinegar, adjust to taste, and cook down over medium-low (3) heat until thick, ~10 minutes. Use as marinade or dipping sauce.
Notes
The amount of chilis can be altered depending on desired level of hotness. This makes a relatively spicy sauce, although it could be spicier.
