An easy and delicious way to prepare chicken for a burrito.

Ingredients

  • 6-8 boneless, skinless chicken thighs (2-3 lbs.)
  • 1 batch of chicken marinade (optional)
  • 1 Tbsp. avocado oil
  • 1/2 tsp. each: salt, pepper, garlic/onion powder, cumin, cayenne

Instructions

  1. Rinse chicken well and pat dry. Add to marinade, cover, and refrigerate for 4-24 hours. (optional)
  2. Once ready to cook, heat skilet to medium (5). In the meantime, cut chicken into 1” cubes.
  3. Pat chicken dry to remove excess marinade. Add seasonings and mix well.
  4. Add 1 Tbsp. of oil to pan. Sauté chicken on all sides until fully cooked though, ~7-10 minutes.

Notes

Cook chicken in batches, if needed.
