A simple version of a cookie for one.
Ingredients
- 1 Tbsp. coconut oil
- 2 Tbsp. coconut sugar
- 1/4 tsp. vanilla extract
- 1 tsp. flax meal
- 1 Tbsp. milk
- Pinch of salt
- 4 Tbsp. spelt flour
- 1/4 tsp. baking powder
- 1/8 tsp. baking soda
- 2 Tbsp. chocolate chips
Instructions
- Combine flax and milk in a bowl and set aside.
- Cream coconut oil and sugar with a spoon until fluffy.
- Add remaining ingredients besides chocolate chips. Stir until just combined. Then, gently fold in chocolate chips.
- Form into a ball, then press flat on top. Bake at 350ºF for 13-15 minutes. Allow to cool for 10 minutes before serving.
